Flourless Peanut Butter Oatmeal Chocolate Chip Cookies- Guest Post by Dallas

One day while I was in the apartment sitting there on Pinterest, I decided I wanted to bake something. I wanted it to have chocolate, but not terrible for me. A recipe that had real ingredients and one where I had most of the ingredients on hand.

I found Flourless Peanut Butter Oatmeal Chocolate Chip Cookies. Oh my goodness, I am so happy I found this recipe. 

Now, I will say I used some different ingredients than the ones listed. Instead of using maple syrup, I used all natural raw honey. I had it on hand which meant I didn't need to buy anything at the store. I, also, added about a tablespoon of cinnamon to the recipe. I had dark chocolate chips on hand so I used dark chocolate chips which was very good. 

Ingredients for my version
  • 1 cup creamy peanut butter
  • 1 cup pure maple syrup
  • 2 tablespoon vanilla extract
  • 1 cup rolled oats
  • 1 cup dark chocolate chips
  • 2 eggs
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt
  • 1 tablespoon cinnamon 

The first step is to mix the peanut butter and honey along with two eggs and vanilla. I use the Whole Foods 365 version of peanut butter because I don't want any additives to peanut butter. All I want is peanuts and salt as the ingredients. It is crazy how some products nowadays have so many ingredients. 

 I mixed my oats, cinnamon, baking powder, and salt together in a separate bowl. Once those ingredients were mixed, I added the dry ingredients to the wet ingredients. 

BTW, don't you just love the "EAT" letters! I went to Ponce City Market and purchased them at this cute art store for $3 a piece. They fit perfectly with my theme for the apartment. I love the simplistic nature of them as well. I am in the kitchen a good bit so it is nice to have those extra touches. 

After scooping some of the batter onto the cookie sheet lined with parchment paper, I was able to look out onto the Zen Garden and my brand new couch! I made these cookies around 5 am so the sun was coming up which was perfect timing. They cook in the oven at 350 for only 8-10 minutes! Just in enough time to get ready for work!

Here are the final cookies! They tasted great! I even brought some to my office and got rave reviews. Yummy, better ingredients, and something different to try in the kitchen!

The Journey to the State Line of Tennessee and North Carolina

Hello Friends and welcome to the blog! 

First stop of the day was at Russell Stovers Chocolate Factory. I would be happy to make this the first stop of every day if calories didn't count! 

First, would you look at that cute photo bomber behind me and second would you look at the size of this chocolate! 

We had so many goodies to choose from but we limited ourselves to sharing a Homemade hot fudge sundae! 

Ice cream on the porch in a rocking chair just doesn't get much better on a nice cool day. 

Before our hike we took a tour around the downtown area and really enjoyed the sites. 

This was so much and I loved grabbing a photo at the famous Tennessee and North Carolina State line point. 

Today's trail was not too hard but mostly uphill on a trail which made it much easier. 

Love this guy so much! 

This trail was much easier because it was more of a trail but it was all up hill so we took it slow! 

I loved when we made it to the Falls and was ready to sit down and enjoy lunch! 

Best view ever for lunch and the water sounded amazing as we sat and for about 30 minutes. 

The view back down was beautiful and we stopped a few times just to take it in. 

Trey did such an amazing job with the backpack that had all of our supplies in them. I was amazed at how he never complained about it. 

Trey loved sitting on the rocks and capturing pictures of the water running down the stream. He actually took some amazing water pictures. 

I would not believe we saw an Elk walking in the woods. It was enjoying an afternoon snack from a tree bush and was not surprised to see us. 

I loved how you would walk up on the gorgeous white dogwood trees that were just sitting in the middle of the woods. The white from the tree just pooped and was beautiful.

Our Final Days in the Smokey Mountains

Good Morning Friends and welcome to my Blog! 

Today I am sharing my final post from our recent vacation in the Smokey Mountains. We have been so busy with life that I have not had a chance to finish the final post. I hope you enjoy seeing a couple of the pictures from our final two days of the trip. 

As you can see in the video that is linked at the bottom of this post the Alum Cave Trail was one of the most challenging I have ever taken part in. It starts off with an amazing walk along the stream but then........be sure to see the video if you have not! 

I loved every minute of walking by the stream and taking in the view. 

The water pack was one of my go-to items for the trail. Having my water right there and plenty of it was key for every trail. 

Trey had an amazing time and I was so proud of the great job he did. 

Eddie and really enjoyed sitting next to the stream and having lunch. I would love to have recorded the sound of the water running by along the rocks and listen to it each night before going to sleep. 

I had so much fun taking on this adventure with the boys! 

Trey loved taking pictures of the water every chance he had and his pictures were amazing. 

I will hold onto these memories forever! 

This was just before going into the cave which I must admit was very adventures of me! 

The picture below is from when I agreed to go on the scariest adventure of my life and just before the panic attack....seriously! 

See how high the mountains are behind me? Well, that's really how high we were up! 

This was on our way down and I snapped this while Trey was taking a break. 

It was so amazing sitting in the hot tub when we returned and watching the sun go down. 

We used the hot tub every single night and enjoyed the view! 

All dressed and ready for dinner. This is one of the most comfortable tops that I recently purchased from The Loft. 

I love those bare feet! 

Here is all the information on the cabin we stayed in and I was very happy with everything! 

What an amazing view!
