Weight Watchers Tips for Those on Night Shift

As many of you know my husband is a police Lieutenant and with that comes the terrible night shift!  If ever there is a time it is hard to follow a meal plan its for those people that one month they work 7am-7pm and the next month they work 7pm-7am. Their off days are always changing and honestly their mind doesn't know if they are coming or going!

Here are a few tips if you schedule looks like this:

  • Get your work outs in. Don't let your body shut down because your on midnight shift. You still have to take our your calendar on Sunday and plan you week. Make that appointment with yourself and keep it. You wouldn't make an appointment with the dentist and just not show up because you are on the night shift, right?

  • Watch your caffeine. Try to drink coffee early in your shift and not to close to the end of your work day. Its hard because 7am might be your time to get off and at 5:30 am you think about getting a cup of coffee to get you to 7am but would you drink a cup of coffee 2 1/2 hours before you go to bed when you are on day shift. You need all the sleep you can get and to much caffeine can mess that up.
  • Don't fall into the snacking way of life. It is so easy to start snacking when you are sleepy but to stay away from this keep fruits and vegetables on hand. Power foods have zero points and that's what you should snack on.

  • You really have to plan your meals. Keep boneless chicken breast on hand because you can make so many different fast and healthy meals.

Pioneer Woman's Baked Ziti Recipe

Last night I made a big Sunday dinner and it was a huge hit! Pioneer Woman's Baked Ziti Night! I have really enjoyed looking at her recipes and cant wait to try several of them.



  • 2 Tablespoons Olive Oil
  • 3 cloves Garlic, Minced
  • 1 whole Large Onion, Diced
  • 1 pound Italian Sausage
  • 1 pound Ground Beef
  • 1 can (28 Ounce Can) Whole Tomatoes, With Juice
  • 2 cans (14.5 Ounce) Tomato Sauce Or Marinara Sauce
  • 2 teaspoons Italian Seasoning
  • 1/2 teaspoon Red Pepper Flakes
  • Salt And Pepper, to taste
  • 16 ounces, weight Ziti Or Mostaciolli, Cooked Until Not Quite Al Dente
  • 1 tub (15 Ounce) low fat Ricotta Cheese
  • 1-1/2 pound Mozzarella Cheese, Grated
  • 1/2 cup Grated Parmesan Cheese
  • 1 whole Egg
  • Fresh Minced Parsley

  • Steps:

    Heat olive oil in a pot over medium heat. Add onions and garlic and saute for several minutes, or until starting to soften. Add Italian sausage and ground beef and cook until browned. Drain off fat, leaving a bit behind for flavor and moisture.

    Add tomatoes, tomato juice, salt, pepper, Italian seasoning, and red pepper flakes. Stir and simmer for 25 to 30 minutes. After that time, remove 3 to 4 cups of the sauce to a different bowl to cool down.
    Preheat oven to 375 degrees.

    In a separate bowl, mix together the ricotta cheese, 2 cups of the grated mozzarella, Parmesan, egg, and salt and pepper. Stir together just a couple of times (do not mix completely).
    Drain the pasta and rinse under cool water to stop the cooking and cool it down. Pour it into the bowl with the cheese mixture and toss to slightly combine (there should still be large lumps.) Add the cooled meat sauce and toss to combine.

    Add half the coated pasta to a large casserole dish or lasagna dish. Spoon half of the remaining sauce over the top, then top with half the remaining mozzarella cheese. Repeat with another layer of the coated pasta, the sauce, and the mozzarella.

    Bake for 20 minutes, or until bubbling. Remove from oven and let stand 5 minutes before serving.
    (Sprinkle chopped parsley over the pasta before serving!)

    Even on Weight Watchers you can have a dish like this, just watch your portions!


    What To Not Do While Eating Out To Help Stick With Weight Watchers

    I can stick with a plan all week and when Friday comes we go out to dinner and I just blow everything! Here are a few things that I know will help!

    1. You do not have to clean your plate!
    I have always had the mindset to not waste. "Waste not, want not!" Now I have found ways around that mindset. When I order something out I always ask for a to-go box when my food is brought to the table and I pack up half right there. I look at what I ordered and think about anything that does not save well and that's what I make sure I eat in the resturant.

    2. Don't stuff yourself!
    Eddie and I used to eat until we were stuffed but now we eat until we are satisfied. There is something so rewarding about pushing your plate away when you have just had enough.

    3. Eat Slow!
    I try to never eat standing up and  I do not rush through a meal. It takes 20 minutes for your body to recognize that its full. Slow down!

    Now that I see it I really need to get busy. I plan to take 2 a day this week to really knock some out! Wish me luck!


    Fast and Easy Stromboli

    One of the best easiest Stromboli sandwiches you will eat!

    1 can of pizza dough
    8-10 slices ham
    8-10 slices salami
    8-10 slices pepperoni
    6 slices provolone cheese
    1/2 cup mozzarella shredded cheese
    1 tablespoon olive oil
    1 teaspoon oregano
    marinara sauce to dip
    I don't know if you are like me but on Sunday afternoons I am rushing in from church and trying to get out the door to a basketball game and then track practice. This past weekend I made a new sandwich that only took me 5 minutes to throw together and then 15 minutes to bake! So much better than fast food.

    Most days you don't get the chance to change clothes, you just move from one step to the other! Here is where you start. Unroll your dough and start laying our your items.
    Lay your dough out as thin as you can roll it.

    Layer your meat and cheese

    Sprinkle mozzarella cheese on top. Slice the edges so you can fold over each other.

    Sprinkle with Italian seasoning and olive oil

    Cut and serve with sauce. Yummy!

    1. Preheat oven to 385ºF
    2. Roll out a pizza dough to form a thin rectangular crust, and place the crust on a baking pan lined.
    3. Layer slices of ham, salami, and pepperoni as a single row in the center of crust. Layer cheeses over meats.
    4. Take a knife, cut either sides of crust next to the meat & cheese filling to make several 1" wide strips. Fold-in the each end part of the crust toward the filling. Using one strip at a time criss-cross each strip to cover the filling.
    5. Sprinkle olive oil over the crust and sprinkle oregano.
    6. Bake for 15 minutes or until the crust turns golden brown.
    7. Cool down a little and slice
    8. Serve hot with warm marinara sauce to dip in.

    My Last Year In My 30's.................

    What a year this is!! My last year in my 30's, my daughter will be graduating this year and heading off to college, my son will finish elementary school and will start middle school. So many new chapters in my life and its all so exciting! I am truly blessed and God is awesome!

    Here is a little picture into my Birthday!!!

    My family did a great job with wonderful gifts. Here is one of my favorites.

    A new hard case and key board for my IPad. I love it and I see lots of blogging to come!!!

    I have also wanted to try this product line for so long. I love the way it smells and my hair is so soft.

    So my day,,,,,, I went to Trey's basketball game and what a present he gave me. He made a basket and had was so pleased with himself!

    Then we made a stop and made a new friend. He was beautiful and so playful. We wanted to take him home! Look at him as we smiles with us.

    He decided to give Trey a surprise kiss! 

                                                    I love his smile. He is such a happy horse.

    Then it was time for a Birthday treat and whats better than cupcakes!!!!!!!!!!

    No worries I shared every last one of them and only took a very small bite!

    Then we were off to dinner at one of my favorite restaurants.

    A very special thank you to my family for making this such a special day!!!


    30 Day Biggest Loser Challenge Starts TODAY

    I am taking part in a challenge at my fitness center and it starts today. Here's how it works:

    I have 30 days to complete 28 classes. I must complete:

    4 Step Classes
    4 Combat Classes
    4 Pump Classes
    4 Spin Classes
    4 Attack Classes
    4 Yoga Classes
    4 Classes of my choice

    Then the person with the highest % of weight loss wins first place.
    The highest % of fat loss.
    Then a drawing for everyone that attended all 28 classes.

    I have been weighed in and body fat % taken.

    I have two classes under my belt so far. RPM Cycle class which I love! The room is complete black with black lights and loud music.

    Then yoga which I also love. It takes stress off of me after a long week.

    Here's to the next 30 days and hopefully weight loss!!! To kick it off I also went back to being blonde!

    Last Day of Vacation

    We have had a great time on vacation and I had to share a few photos from our last day. On Sunday, Eddie had to leave early because of work and with our last day it was raining....what does that mean.....more shopping! Just before Eddie left we ran for a cup of coffee at the Starbucks inside the Resort. Hat and no makeup rainy kind of morning with hot coffee, awesome morning!

    Then time to dress and head out to some of our favorite shops.

    We stopped for lunch and snacks to build up our shopping energy!

    These are so yummy in the white icing.

    When you make a purchase of 75.00 at Victoria's Secret they give you a box of chocolates. Lets just say they were not so yummy...

    Trey found goodies he loved.

    I found  new friend!!!

    While shopping I was so excited to find these new sandals. They look just like my Tory Burch sandals.  I love them!!
    The pair in the back our my real Tory Burch and the front sandals look so much like the real ones but at only $18.00!!!

    We had fun shopping in the little boutiques and I love these shirts we found at Francesca's.

     We had a great time but now we are back to the real world. My Biggest Loser Challenge starts today so no more vacation style eating!


    A Few Tips to Help Get You Moving and Stick With Weight Watchers

    I am always looking for ways to keep myself motivated for......FITNESS!!

    Creating an exercising promoting environment is the key to being successful. Here are just a few fun tips that I find to work for me.

    1. Put a sticky note on your bathroom mirror that reminds you "the only way to loose it is to move it!"

    2. Lay out your workout clothes the night before. If you have everything laid it its harder to not go.

    3. Each Sunday night I take my fitness calendar the gym gives me with all the classes and times and I put them in my day planner. This is my appointment I make with myself. I expect to keep it just like I would with any other client!

    4. We all have different budgets but buy yourself  a new piece of workout gear whenever you can. Having a new piece of workout clothing makes me so happy and I want to workout. You can go from high end stores, outlets, to places like TJ Maxx. The idea is to buy a piece here and there to add to your collection.

    I hope these tips will motivate you to move it!
