Saturday Shopping Trip

Eddie and I started out on a shopping trip for a birthday gift at Hobby Lobby which is one of my favorite stores. While riding in the Jeep I was being silly and taking pictures but every time I tried to line the frame up I would notice the something was changing and I figured out he was being silly and moving forward out of the picture. It was fun that we were both off for the day and had a ton of laughs!




I know............silly but life is short so have fun!!! If you have seen my previous post you would have noticed I always wear my Oakley running sport glasses but today I ventured out with these. I was playing with the camera to see what I thought about them. I think a mirror tells one story but a camera doesn't lie...lol!

Dallas purchased her new Toms this week and loves them. I must say they are very comfortable and cute. Best of all every time you purchase a pair they donate a pair to a child in Africa. Awesome! I also wore my new sweater that I picked up from Ann Taylor Loft. Its always great when you can find a very light weight sweater for those days its in the low 80s but inside the store its freezing.



I could decorate my house with a new color scheme every time I visit Hobby Lobby. I have a bedroom upstairs that in the future I want to have everything in a black and white color scheme so I am always keeping an eye out.


This looks black and white but it was more of a cream and dark wood. I recently changed out my master bathroom and I need one more picture but I don't think this is the one, still cute!



I love this one! I have the perfect spot for it and best of all they are on sale!



I like this lamp but I really don't have anywhere to put it but had to share it!



I love this lamp for the room I want to set up in the black and white theme. Love it!!

Attending an Evening Fundraiser

As many of you know my husband is a LT with our local police department and last year we had one of our local officers killed while on duty and recently we had one that was shot while responding to a call. The wives of several of the officers got together and attended a fundraiser in honor of both. Here are a few pictures!


I took part in painting one of the police hats.

Snacks During the Day

Snacks During the Day

I am giving very serious thought to starting a training program for a triathlon. I have mentioned before the only way for me to increase my speed on running is to continue to bring my weight down a little more which is still in a very healthy zone if not an even healthier zone. If I take on the training my diet must also follow a very strict program.

To do this I am focusing my attention back on my daily meal plan. I spoke with a nutritionist and she shared great advice with me. I wanted to pass along a few of my snacks that I eat twice a day. I have my breakfast, lunch, and dinner which consist of a protein and carb. The two snacks I have around 10:00 and 2:00.

These are so easy to prepare for the week and making taking my lunch to work is so easy. I also try to stay around 100-200 calories for each snack.



Ideas for snacks are:

  • Zucchini muffins or carrot muffins from low calorie high protein recipe
  • Mojo Bars by Cliff
  • Quaker Chewy Bars with Protein
  • Snack Size Zip lock bag filled with a high protein cereal
  • Cheese stick with a hand full of wheat thins
  • Apples cut up with lunch meat
  • Greek yogurt but I am still adjusting to this one. Right now I am eating light regular yogurt
  • Piece of toast with peanut butter
  • The easiest protein is lunch meat and I add fruit or a yogurt.
  • My favorite is Muscle Milk
Sometimes I mix and match them like today I had an apple and a cheese stick. I was still under my calorie range. I like to try and have a little protein and carb together.
Things that are great for snack but more of a weekend snack because they require a little more work or additional items.

  • Frozen fruit. This could be strawberries or grapes.
  • Egg white omelet with vegetables
  • If I am in the mood for something special I make a fruit and yogurt parfait in a special glasses
  • Protein waffle with sugar free syrup
  • Smoothies. I use pre packaged smoothie mix in the freezer section and a scoop of protein powder
  • Popcorn. You can add seasonings on it for a different flavor. This is more of a munchie snack.
I find that my snacks mixed with protein and a small carb really help me through out the day! Another thing I love about eating this way is I can mix and match everything all thru the day. Any of this can go with breakfast, lunch, or dinner and then I can mix for snacks!

Pinnapple Salsa Fish

I had to share the most delicious recipe with each of you that you will love. I like a clean fish recipe but this topping really makes it so good.



I start by spreading Old Bay and a little olive oil on the fish. I bake for about 25 minutes or until its white and flaky.



For the topping I take:
1/4 c pineapple,
1/2 of a chopped tomato,
1 tbs chopped jalapeno,
1 tbs chopped red onion,
and about a tsp of honey.

I let this marinate together while the fish is cooking. Once the fish is out of the oven I place my topping on it and its so yummy! You will love this!

Firecracker Shrimp Dish Recipe


Today I made the most delicious lunch and something you must try! This will be on my weekly menu lunch plan at least once a week! Its awesome!





Here's what you need:

1 tablespoon of chopped fresh parsley
1 1/2 c hot cooked brown or white rice
12 ounces of fresh or frozen shrimp that are peeled, deveined
1 tablespoon olive oil
2 cloves garlic
1/2 c reduced sodium teriyaki sauce
1/2 teaspoon crushed red pepper
2 cups steamed broccoli

Add the fresh parsley to your cooked rice and set aside.
Then thaw shrimp, if frozen. Pat the shrimp dry with paper towel. In a large nonstick skillet, heat the olive oil over medium heat. Add the shrimp and garlic. Cook for 1 minute. Add teriyaki sauce and crushed red peppers to the shrimp in the skillet. Toss to coat. Continue to cook for 2 minutes or until shrimp or opaque. Remove from heat.
If you use pre cooked frozen shrimp do not add them until the end and cook for 1 minute.
I add a little sauce over my rice and serve shrimp on top. The steamed broccoli is my side item.

It is so yummy!!!

Azalea Trail Run 2012 Photos


I recently ran the Azalea Trail Run this month and they just posted the professional photos. Here are a few of them.

Steak Stir Fry


I made the most delicious stir fry tonight that you have to try!


I used ingredients from here and there that I have tried in the past and it was very good. Here is the recipe.

 

  • I used 2 steaks cut into thin strips
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 3 tablespoons cooking oil divided
  • 2 cups zucchini
  • 1 cup squash
  • 1 cup water
  • 1 teaspoon beef bouillon granules

 

  1. Cut beef into 1/2-in. strips; place in a resealable plastic bag. Add cornstarch and toss to coat. Combine soy sauce, ginger and garlic powder; add to bag and shake well. Refrigerate for 30 minutes.
  2. In a large skillet or wok, heat 2 tablespoons of oil; stir-fry beef until done to the degree you like, about 3-5 minutes. Remove and keep warm. Add remaining oil; stir- fry squash and zucchini for 4-5 minutes or until crisp-tender. Add water and bouillon. Return beef to pan. Cook and stir until thickened and bubbly
Here are a few pictures of mine along the way. Side note, Publix actually sold the steak cut in the strips and it was awesome! Made it fast and easy.


You can see the way I cut my beef into thin strips. It really helps with cooking.



I kept my squash and zucchini the same size to also help with cooking.



Ingredients for the sauce. This sauce is not a soupy sauce and that's the point. You want this to be a healthy version but still very yummy!



I cook everything in my wok that I picked up from William Sonoma. Its awesome!



I serve with rice and we are set! Enjoy!

Chicken Tamale Pie

This was so easy to put together.


Chicken Tamale Pie

Author: Pinch of Yum, adapted from Cooking Light
Prep time: 15 mins
Cook time: 30 mins
Total time: 45 mins
Serves: 8
Ingredients
  • 1/3 cup fat free milk
  • 1/4 cup egg substitute
  • 1 1/2 tablespoon taco seasoning, divided
  • 1/4 teaspoon ground red pepper
  • 1 (14 3/4 ounce) can cream-style corn
  • 1 (8.5 ounce) box corn muffin mix (such as Jiffy)
  • 1 (4 ounce) can chopped green chiles, drained
  • 1 (10 ounce) can red enchilada sauce – I recommend going with an authentic Mexican brand
  • 2 cups shredded cooked chicken breast
  • 3/4 cup shredded white cheese (I used Raclette – random, I know, but it’s what I had on hand, and it ended up being delicious!)
  • cilantro and crumbled Cotija cheese for topping
Instructions
  1. Preheat oven to 400°.
  2. Combine the first 7 ingredients (milk through green chiles), using just 1/2 tablespoon of the taco seasoning, in a large bowl, stirring just until moist. Pour mixture into a round pie plate (mine was glass) coated with cooking spray.
  3. Bake at 400° for 15-20 minutes. While corn is baking, toss the chicken in the remaining 1 tablespoon taco seasoning. When corn is done – it will be just barely set and golden brown – pierce entire surface liberally with a fork (if it’s sticking to the fork, bake a little bit longer). Pour enchilada sauce over top. Top with chicken; sprinkle with cheese. Bake at 400° for 15 minutes or until cheese melts. Remove from oven; let stand 5 minutes. Cut into 8 pieces; top each serving with cilantro and Cotija cheese.

Gulf Coast Half Marathon Race Review


Today was my 2nd half marathon! I must admit I thought long and hard about not attending because I haven't had the chance to train like I should have. I have been going out for a lot of short distance runs and bike rides but not long distance training. I went in knowing I might not hit a PR but I was proud that I stuck to what I committed to. I didn't let the challenge cause me to back down because of lack of preparation. I just went out and pushed the best I could. Plus I love a new medal!

The day started by waking up at 3:30 am and hitting the road at 4:30 am. We had an 1 1/2 hour drive ahead of us and they wanted everyone to arrive about an hour early to get settled. You can see Trey and I in the dark with the car light taking a quick picture to see our early morning faces.




We stopped at the Florida rest stop and the clouds were very dark and looked like rain but we never saw anything after this. Thank goodness!


We arrived and it was time line up! I think we actually had 15 minutes before the start which was cutting it very close!


I was trying to decide if I was going to wear a hat and within 2 minutes I knew it was a hat day. The wind was so strong.


Here's another tip that I did today for the first time and it really worked great.

I safety pinned my GU packet and my Sport Jelly Beans to each side of my shorts so I didnt have to carry them. It worked great. The only issue was I should not have eaten both, one would have been fine. Between the Gaterade and the two packets I could not take any more sweets so make sure you really train to see what works best for you!


Just seconds before the gun went off there was one problem, you are squeezed in tight waiting for the sound to take off and out of no where the girl in front of me decided to kick her leg back and stretch it backwards toward her back. I thought she had cleats on as it cut my leg. I know you really want to see my leg but the lesson here is Don't decide at the last minute to do a random kick in the air. You might hurt someone like me!



Then I had to run 13.1 on my hurt leg! This picture is after the race and it had time for the swelling to go down! It really hurt!

They called for us to line up and the gun went off at 7:00 sharp! Look at the sun coming it, just amazing.



The following photos are from the view along the race. I am sure you can imagine why each photo will not need words. I will say the first 8 miles of the race were very tough and I think really took a lot out of me. The wind was so strong. There was also a strong smell every so often of dead fish which was killing me. I really think I used energy that Im not used to from having to push through the hard wind.


One other note is hours after the run I can still taste the sand. The view was amazing and really worth it.

The sun started coming up and it was so bright and hot!

Ok, this is the worse picture ever but I had to add it to help you get an idea how hard it was pushing through wind and hot sun. Look at this poor girl, she is so tired! I was actuall trying to give a little smile. I had to tighten my cap and put my glasses on it so it would stop blowng off my head until I could change directions.


Ok so who is this guy you ask? He was my pacer. I have never paced myself with a guy before but I thought it might add a little challege to the mix. You know the drill...he runs, I run, he walks, I walk with the goal each time to get a step ahead of him. Then some how I pushed a head and had to find a new pacer! Woo Hoo!



They did a wonderful job with all the volenteers along the route. There were also several water stations that offered both water and gaterade. Since I was carring my gaterade I would take a cup of water at every station.


This is the coolest app on the iphone. Its the find my Iphone but it let Eddie log in and keep up with my location. You can see the ocean and me running along it. I love it! Plus as he would hear the ambulance sirons and hear that another person has been picked up it would give him peace of mind that its not ME!


My family is such a huge support and cheer team for me. When I hit that finish line no matter what race I take part in I see their big smiles and hear their cheers. Then they greet me by telling me how proud they are of me. It just doesnt get any better!

This race offers two more runs that I plan to take part in so I can have the complete set of medals! One is in Gulf Shores and the other is in Lousinana.


Just a few extra pictures, I pulled up Trey and Eddie's pictures on their phone to see what they were doing while I was running and looks like they had a lot of fun killing time!
