Flourless Peanut Butter Oatmeal Chocolate Chip Cookies- Guest Post by Dallas

One day while I was in the apartment sitting there on Pinterest, I decided I wanted to bake something. I wanted it to have chocolate, but not terrible for me. A recipe that had real ingredients and one where I had most of the ingredients on hand.

I found Flourless Peanut Butter Oatmeal Chocolate Chip Cookies. Oh my goodness, I am so happy I found this recipe. 

Now, I will say I used some different ingredients than the ones listed. Instead of using maple syrup, I used all natural raw honey. I had it on hand which meant I didn't need to buy anything at the store. I, also, added about a tablespoon of cinnamon to the recipe. I had dark chocolate chips on hand so I used dark chocolate chips which was very good. 

Ingredients for my version
  • 1 cup creamy peanut butter
  • 1 cup pure maple syrup
  • 2 tablespoon vanilla extract
  • 1 cup rolled oats
  • 1 cup dark chocolate chips
  • 2 eggs
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt
  • 1 tablespoon cinnamon 

The first step is to mix the peanut butter and honey along with two eggs and vanilla. I use the Whole Foods 365 version of peanut butter because I don't want any additives to peanut butter. All I want is peanuts and salt as the ingredients. It is crazy how some products nowadays have so many ingredients. 

 I mixed my oats, cinnamon, baking powder, and salt together in a separate bowl. Once those ingredients were mixed, I added the dry ingredients to the wet ingredients. 

BTW, don't you just love the "EAT" letters! I went to Ponce City Market and purchased them at this cute art store for $3 a piece. They fit perfectly with my theme for the apartment. I love the simplistic nature of them as well. I am in the kitchen a good bit so it is nice to have those extra touches. 

After scooping some of the batter onto the cookie sheet lined with parchment paper, I was able to look out onto the Zen Garden and my brand new couch! I made these cookies around 5 am so the sun was coming up which was perfect timing. They cook in the oven at 350 for only 8-10 minutes! Just in enough time to get ready for work!

Here are the final cookies! They tasted great! I even brought some to my office and got rave reviews. Yummy, better ingredients, and something different to try in the kitchen!
