Lemon Poppyseed Mini Cakes Recipe

You will love these no matter what type you make from mini muffins to mini tea cakes. Let me share with you just how easy they are to make. They are also very kid friendly and one of my sons favorite breakfast/snack items. 

I love to sit these out for a weekend brunch because they look so pretty. 

3 eggs, room temperature 
¾ cup sugar 
¾ cup  melted butter
½ cup  water 
3 tbsp  lemon zest
1 tsp lemon extract
1 tbsp poppy seeds
1 ½ cups  flour
1 tbsp baking powder
½ tsp  baking soda
1 tsp  salt

½ cup of powdered sugar
2 tbsp  heavy cream
zest of 1 lemon
1 tbsp  poppy seeds

Preheat oven to 400F degrees. Bake for 10-12 mins but watch closely. Your baking pan might be smaller than the type I used. You can use muffin tins or small bunt pans like I used. 
Whisk together the flour, salt and baking powder and set aside.
Mix together eggs, sugar, butter ,water, lemon zest, lemon extract and poppy seeds.
Then slowly add the flour mixture just until combined, being careful not to over mix! You do not want to over mix because your muffins will come out very tough. 
You know when it's done because your when a toothpick comes out clean.

Mix cream and sugar until smooth. Once muffins have cooled place 1 teaspoon of glaze on each muffin, spread over surface. Sprinkle with a few seeds and top with fresh zest. 
You do not want to put the glaze on until its completely cool because it will melt.
