Graduation Day

This past year I took part in the most amazing program with my city as part of a Leadership Program for up and coming leaders in the city. I would highly recommend that you should look into a program like this in your city. I thought I knew everything about my city but was amazed how much new information I now have. This program is one that you have to have your new submitted by someone that would recommend you. Then you go for an interview and only 40 or so people will be selected. I felt honored to be one of them.



Here is a look at graduation day!


I had the opportunity to meet so many new people. The fun part of this is the program tries to pick people from different career fields. We had attorneys from different fields, a police office, a deputy, real estate, banking, construction, vice presidents, doctors, and so on. Just an amazing opportunity to meet so many different people.




This was the day of our graduation. I wanted to grab pictures from as many people from my group because they were just such fun people.





We are in our seats waiting to make our presentation on our project we were assigned.

Above was my group making our presentation before the class. I was very pleased with the job we did and the amazing job the other groups also did.



This was one of the other groups giving their presentation. Each group was given a topic to help better out city.  I just cant explain what an amazing experience this was and I walked away with so much more knowledge about my great City!


Roasted Asparagus Recipe


This is such an easy side dish to make and goes with everything. Break the ends of your asparagus and lay on a sprayed dish or pan. Top with a quick splash of olive oil and then sprinkle with salt and pepper.

Top with chopped garlic.

Place in 400 degree oven and cook until the asparagus reaches the level you like. Its usually about 20 minutes. If you like your asparagus cooked to a very tender level I would cook without garlic for 10 minutes then add garlic to finish cook. This will help the garlic to not burn. 

Its that easy!

Crawfish Pasta Recipe


This is a very rich delicious recipe but I must tell you that its one you will only make for something special as we did for Fathers Day. I do not know what the calorie count is but I can only imagine it is high! Well worth making but save it for something special.


1lb. crawfish tails. I pick up the frozen pack from Walmart
3/4 stick of butter
1 pint of half and half- you could also use heavy cream
4 cloves of garlic- I use the pre chopped in jar
1/2 chopped yellow onion
1-2 tbs Creole Seasoning
1 box of pasta, any type. I use the spiral.

Cook pasta according to the directions on the package.
 Melt butter in a large pot and sauté the onions and garlic for 3 minutes. Add the crawfish and sauté for 2 minutes.
 Add the half and half then add the creole seasoning, tasting as you add until its right.
Cook for 5-10 minutes over medium heat until the sauce thickens.
 I take 1/2 cup of sauce and place in a separate bowl and add 1/2 tablespoon of flour to thicken. I add that back to the sauce.
In a separate pot you will keep your drained pasta. I do not pour my crawfish sauce over the pasta because some people might like their portions different and the pasta will take up a lot of the sauce.

How Bright is Your Light?


There are a couple of reasons I started my blog back in 2011. I wanted to share running and health tips as I took part in half marathon runs because running was something new to me. I wanted to post photos of  my life and help inspire others to take in every minute with your sweet kids and husband. I love sharing recipes both healthy and those you would not eat everyday :). I love sharing vacation photos to help others know about the type of trip we took from a cruise to Disney World. I love sharing things about fashion and beauty products. As you can see I like to cover several topics but the one I want to share today is just a thought on how to make a difference in the world. Something as small as a smile.

My daughter took a cashier position at a very well known retail store for the summer while she is home from college. Great way to build her bank account before returning to school because we would really rather she not work during the year and stay focused on her studies. I feel the Lord has blessed me so I want to turn around and bless her by helping with school so she comes out with no debt from college. This summer job is helping her have "fun" money.

Its amazing when she comes home and shares with me how people treat the cashiers. Some of course are very nice, some don't speak and act like they do not see the cashier except to make their payment, and then there are the "others." The "others" are the people that could not find a front row parking spot or could not find the items they needed. The "others" are the ones that came in the store made at the world. They of course take out their frustrations on the poor cashier.

You come in contact with a cashier for about 2-5 minutes and you have no idea what their story might be. My daughters story is she is such an amazing young lady that is going to college full time to be prepared for the life and hopefully make a difference in the world.

One cashier might be that single mom that would give you the shirt off her back as she works two jobs to help put food on her table. What if the next time we went in her line we really took a minute to say hello and gave her a smile. After she rang up the items if we said thank you and looked her in the eyes to let her know we appreciate her. Yes this might be her job but why not let your light shine and help brighten hers!



Now I know there are those people on the other side that might not be pleasant but what if we treated them the same way with a smile. Would they smile back because of it.......well lets try it and see! It cant hurt, right. Lets work together to help spread a smile!




Dierks Bentley Concert Night




My sweet friend had tickets for Dinner, Drinks, and Dierks and asked me to join her! I love attending events and this one was suppose to be first class. I can agree that it really was!




I love when there is a red carpet at an event because it makes it so much fun. With this one there was no photographer so we turned it into our own red carpet photo opportunity!



They did an amazing job with the food and decorations.

The Food Network Show Came to Visit


This past weekend the Food Network Show came to our city and it was all the talk. We really wanted to check it out since we are such huge Food Network fans. Here is a little run down of the day.

rain, rain, and more rain!


As you can see the weather was not the kind of weather you would want when it comes to standing in line to sample food but everyone hung in there with their umbrellas.


The weather finally stopped for a bit so we quickly jumped in line to start sampling.

This was the line to the left of us! As you can see the crowds were out and ready to sample.



Of course this is me after standing in the rain.


So much fun to see the camera crews.



I will say a lot of people did not like the prices so that was one negative I heard in the crowd. If you want to try multiple items from the three different trucks it can get expensive very fast.



We had the perfect spot in line so if it started to rain Trey could just slide in the little hideaway and stay dry! Isn't he just the cutest!!!



Fighting the rain!




Ok here is where my little bit of a complainant comes in. It was suppose to start at noon and by 1:50 Trey and Dallas were so hungry I sent them to the ice cream shop for milk shakes. The trucks were really running behind on time. We finally gave up and left to go get lunch. I am sad to say we never had the chance to try any of the food. The crowd was yelling, "Food, food, food." Everyone was pretty hungry.


No fear because Mellow Mushroom had yummy pizza waiting for us! Overall we are really happy we had the opportunity to see the filming and crew. Just wished we could have tasted the food that smelt so good!


Au Jus Ranch Crock Pot Roast




This is one of the easiest dishes I have ever made! Perfect to put in the crock pot before you head off to church or a work day. You should give this one a try. My family loved it.






Ingredients



  • 1 3-pound chuck roast
  • 1 1-ounce packet of dry ranch seasoning mix
  • 1 1-ounce packet of dry au jus gravy mix
  • 6 tbsp. butter
  • 1/3 cup water


  • The How To:
    • Add 1/3 cup of water into your crock pot then place the chuck roast on top.
    •  Sprinkle the dry au jus mix on top, sprinkle the dry ranch seasoning mix on top of the chuck roast, then place 6 tbsp. of butter on top of the roast.
    • Cook on low for 7-8 hours or until the meat is tender enough to shred.
    • Shred and serve with the gravy.
    • You can serve over mashed potatoes or rice.
    I wanted my roast very tender so I cooked on high for 2 of the hours.
