Zoe's Chicken Roll Up Copy Cat Recipe



We had lunch at Zoe's Kitchen this past weekend and loved the Chicken Roll Up. I knew without a doubt I could make this at home. I did and it was a huge success. Here is how I did it.


Lay out your uncooked shell to start the process.


You will need to first sauté your onions.
Grill your boneless chicken breast and cut into thin strips. You can use any type of seasoning for your chicken.
Cut tomato into chunks
Add feta cheese
Add shredded lettuce

Then wrap the roll of very tight, the key is to not fill to full. You will cook in sauté pan about 2 minutes on each side. Watch it very close so you do not brown the sides to full.
Serve with a side of salsa!


You will love them!




Sausage Apple Brie Strombolli Breakfast



A friend of mine from church shared with me that Pillsbury recently posted this dish on their website and from the look of it I knew I had to try it.


1 package of Sausage
1 can pizza crust
1/2 cup orange marmalade
1 small apple
8 oz brie cheese cut in 1/4 in slices
5 tablespoons chopped pecans
5 tablespoons sweet dried cranberries






  Spread 1/3 cup of the marmalade down center of dough in 4-inch-wide strip. Top with apple slices, half of the cheese slices, the sausage, remaining half cheese slices, 3 tablespoons of the pecans and 3 tablespoons of the cranberries.


Using kitchen scissors or sharp knife, make cuts 1 inch apart on long sides of dough to within 1/2 inch of filling. Fold strips of dough diagonally over filling, alternating from side to side, stretching dough as needed. Bake 15 minutes.

Meanwhile in small bowl, mix remaining marmalade, 2 tablespoons pecans and 2 tablespoons cranberries. Spread marmalade mixture over top and sides of partially baked stromboli. Bake an additional 10 to 15 minutes longer or until golden brown. Loosen stromboli from parchment paper; let stand 5 minutes.



This was just a test dish and I hate that I did not place it on a nice white serving platter. If I was serving this for an event or occasion I would have served it so it looked nice. My family really enjoyed it and it heated up great the next day for breakfast leftovers.

Holiday Sale Outfits and a Day Out


I shared that I was really looking forward to finding those awesome items on sale this weekend with the holiday sales and I am really pleased with what I found. I have to share a few of them because they are still available. I will be sure to share them over the next few days so you can pick them up.

These are items from Ann Taylor. I picked up this neon pretty yellow silk shirt up which I love. Its so comfy and its perfect with everything. I paired mine with a black and white A line skirt that they also had. Both are very comfortable and perfect for summer.



I paired it with a black cardigan because sometimes it can get chilly in an office setting but it didn't take long for that to come off because the heat in the south is so hot! I paired mine with my black Tory Burch flats but you could add heels or a wedge.


I also picked up the tan and black stripe skirt and love it just as much! Picked this outfit to wear out to the movies with the boys!



I paired mine with the black shirt which also came from Ann Taylor but would you believe I picked it up for $9.99! I love it because it rolls up as a 3/4 sleeve or you can keep long sleeve. Also I wore my black Tory Burch flats and necklace/bracelet combo is from Market in Atlanta.



We spent our Saturday afternoon at the movies watching Godzilla. Wow what an action packed movie!

Then we were off to a night of Pops Symphony in the Park. Needed to wear something light but yet something to keep any bugs away since it was in the park. The temperature was about 90 but there was a breeze which made it nice. Summer is here!


We had blanket out and we were ready for a great show.


Perfect weather for a performance.



As the sun went down and the stars came out the music was perfect.

Ulta Haul and Skirt You Must Purchase


When I saw this in the ad I knew I had to have it for travel purposes. We love to take vacations and most of all we love to go on a cruise. We actually have one planned in the very near future and I wanted to take this along. Its folds up for travel and my plan it to unpack it along with my hair sprays and hair care items and keep everything nice and neat in the room. How awesome is this caddy! Its going to be perfect for travel.


With the holiday sales that will be coming up this weekend I had to share this skirt with you from the Ann Taylor Outlet. It is so comfortable and light for the summer. I love pairing it with a white shirt and statement necklace. There is a little fashion diva inside of me and I have fallen back in love with dresses and skirts. You have to pick this skirt up if you see it!

A Look into a Week of Activities


I enjoyed sharing a fitness and meal plan recap for the month of April. Every couple of days I tried to blog and share a recap of our meals and my fitness. As the month went by I found I was able to really cut out the fast food which of course saves calories and money! It was eye opening to see the lack of all the right things but definitely helped me get on track. You should see how much I am working out now and getting my runs in. I would highly recommend tracking your fitness and meals for one month and you would be really surprised. With our half marathon just around the corner in a few months I need to get those miles in. We are doing a very good job getting out there each day!


This is what we look like several times a week at the end of the day. Getting out there and getting it done!!!! I am so proud of my Trey pushing hard so we can run an awesome half marathon in November!


We are on the edge of our seats because we have a few more days of school............wow I need a summer break!!!



This week was a fun week at work because we had the chance to bring 80 cupcakes to our adopted school for Teacher Appreciation Week. Positive note was we didn't eat a single one!!!!


There were 8 tables set up like this and you had the chance to sample all types of different seafood. Lots of food tasting and a chance to chat with so many different people.



I was glad the event was inside but we had a bad rain storm to work our way through to get inside. We managed to stay dry for the most part. It was well worth it because there was great food and an awesome band waiting on us.




Of course as you saw in a previous post one of my highlights of the week was an award my company received for a project I was part of and the fact my family was able to see it.

The sweet man you would ever meet!



Home for the summer! I can not believe her first year of college is over and only 3 left. Where does the time go!!!! She has big things ahead of her with a bright future.


Eddie and I were snapping this picture and it was cute how Trey had to jump in. He is just so cute!


My family means the world to me and the thought that went into this gift really touched my heart!


A couple of pictures of us from this weekend before heading out. I would like you to notice the kettle bell that I only saw in the picture as I was loading the pictures. See if on the left side of the picture with the blue part and black handle. I want you to know I keep it in the kitchen and while cooking I will pick it up and do a set of arm lifts then stir dinner and go another set! Between breakfast, lunch, and dinner 7 days a week I should have a great set of arms by the end of the month!!!!

Surprise of the Night!




My company started a program with an Education Initiative that I had the great opportunity to help put together and over see. Tonight we were invited to an event which to our surprise we were named The Partner of the Year! It was such an exciting night and here are a few pictures of the fun!


Here we are on the drive there. I was so happy that Eddie and Trey were able to join me. Of course would have loved having Dallas but she was finishing her day coming back home for the summer.


Just before walking in we had the chance to view the beautiful antique cars.

We were very honored to receive this award. I have enjoyed working on a project where the sweetest kids were involved and teachers that love their jobs! They go to work each day in hopes to make a difference in a child's life.






I feel so blessed to have a job that I never wake up feeling like I have to go to work. Each day brings me the new opportunity to try and make a difference!
