Homemade BlueBerry Hand Pies Recipe

I tried a new recipe this weekend and my family loved it. It was one of the easiest desserts I have every made. The only thing I will add next time is cold vanilla ice cream!!

Items you will need. They are also listed below.

I love this tool I picked up at William Sonoma to zest my lemons.

There is nothing that smells better than fresh lemon zest.

 This is what it will look like when you cut the pie sheet in quarters.

You will fill one side and leave room to fold it over.

Serves: 8

  • 8 ounces cream cheese, room temperature
  • ¾ cup granulated splenda, plus 1 tablespoon
  • 2 teaspoons lemon zest
  • 1 tablespoon lemon juice
  • 1 large egg
  • 2½ cups frozen blueberries
  • 2 tablespoons all-purpose flour
  • 1 – 15 ounce package refrigerated pie crust (2 crusts)
  • 2 tablespoons heavy cream

  1. Preheat oven to 400 degrees. In a medium bowl, combine the cream cheese, ½ cup of sugar, lemon zest, and egg and stir until smooth.
  2. In a large bowl, toss the blueberries with ¼ cup of splenda, lemon juice, and flour. Place one pie crust on a baking sheet lined with parchment and cut into quarters with a sharp knife. Spoon 1 tablespoon of the cream cheese mixture into the center of each quarter. Then spoon 2 tablespoons of the blueberry mixture on top. Brush the edges with heavy cream and fold the crust over to create triangles.
  3. Crimp edges of the pies to seal. Brush tops of pies with more heavy cream and sprinkle with ½ tablespoon of sugar. Repeat with second pie crust and fillings.
  4. Cut a small vent in the top of each pie with a sharp knife and bake until golden, 20 -25 minutes, rotating the baking sheets in the oven halfway through.
  5. Let the pies cool completely on wire racks before serving.

 So yummy and perfect for anytime.


Weekend Kayaking Trip

I am trying to find activities that we can do as a family but also work health and fitness into it at the same time. One new way for us is kayaking. We had such a great time and are really looking forward to doing this again very soon.

Packed and ready to head out.

The view was amazing. Such a great way to catch your breath after a hard work week.

I like this type kayak much better because its open and you don't feel like you are sitting in a hole.

A couple of photos of Eddie, he was great and such a good teacher.

Trey found that he also liked the yellow boat much better. We would pull it back in and the next person would take it out. Just like Eddie to always be so sweet and give up his items for others to use.

Less Calorie Food v's More Filling Food

The Three Factors That Play a Role in What Makes Food Less Calorie Packed and More Filling:

Water. Many fruits and vegetables are high in water, which provides volume but not calories. Carrots for example, are about 88 percent water and have only 52 calories in 1 cup, where a 1 cup serving of pasta has about 1 percent water and 200 calories in 1 cup.

Fiber. High-fiber foods, such as vegetables, fruits and whole grains not only provide volume, but also take longer to digest, making you feel full longer.

Protein. A number of studies indicate that protein makes a person feel more full than carbohydrates or fats. This suggests that adding sources of lean protein to your meals/snacks can help control hunger.

Low Energy Density Eating Tips

·   Have a broth-based soups, or salad (dressing on the side of course) before a meal.

·   Add fresh or frozen fruit to meals and/or snacks.

·   Add more vegetables to pizza, stir-fry, and pasta dishes.

·   Increase fiber intake by eating more high-fiber cereal, whole grains, legumes, vegetables and fruits.

·   Increase protein intake by eating more lean meats, low fat dairy products, beans, or soy based foods such as tofu.

·   Drink water, low-calorie or calorie-free beverages such as water with lemon, seltzer, naturally sweetened low calories drinks, etc.

·   Choose foods with high water content such as watermelon, lettuce, etc. to feel more satisfied and hydrate at the same time!

Its interesting that the foods that are closest to their ‘natural form’ ( not processed or man-made) is when they are the healthiest, and these are the foods that generally make us feel the most satisfied!

Weight Watchers Key Lime Pie Recipe

We love Key Lime Pie but the calories can add up fast with all the ingredients and not to mention the amount you want to eat because its so good! A friend of mine shared this recipe with me so I had to share it with you!

My only comment on this pie, you will want to eat it the same day as you make it. The longer you leave it in the freg it gets stiff and sponge like. Its very good on the same day and low in calories.

Weight Watchers Key Lime Pie

Weight Watchers Points Plus:  4 per serving

  • One Graham Cracker Crust
  • Two cartons (5-6 oz ea.) of Yoplait 100 Greek Key Lime Flavor Yogurt
  • 8 ounce carton of Fat Free Cool Whip or light
  • 1 box  Lime gelatin
  • 1/4 cup water

Heat 1/4 cup of water in the microwave for a minute to two minutes until the water starts to boil.
Dissolve the gelatin in the boiling water.

In a mixing bowl, combine the gelatin with the Yoplait Greek yogurt until combined.
Gently fold in the tub of cool whip.

When it is all combined, pour it into the pie crust.  Cover and refrigerate until set (at least two hours).
Enjoy! But remember its best eat that day!

Weight Watchers Buffalo Enchiladas Recipe

Preheat oven to 375 degrees. Prepare an 8×10 casserole dish with non-stick spray.
In a medium bowl, mix together enchilada and buffalo wing sauce. I use Franks Wing Sauce. Set aside.
In a large bowl, toss together shredded chicken, greek yogurt, garlic powder, beans and buffalo/enchilada sauce. Pour in 1/2 cup of the enchilada sauce mixture and stir until combined.

Working with one tortilla at time, fill with about 1/3 cup of the chicken mixture.

Roll the tortilla and place it seam-side down in the dish. Once all tortillas are filled, pour the remaining enchilada/buffalo sauce on top of tortillas.

Top with the cheese and bake for 20 minutes, or until the cheese is melted and the sauce its bubbling. Immediately after taking enchiladas out of the oven top with the green onions (and cilantro if desired) and serve warm!


10 tortillas
1 (14 oz) Mild enchilada sauce can
1/2 cupBuffalo wing sauce
1 1/2 cupCooked and shredded chicken (about 1 1/2 large boneless, skinless chicken breasts, cooked and shredded) I cook mine all day in the crockpot
1/2 cupLow fat plain Greek yogurt
1/4 tspGarlic powder
1 (15 oz) Refried beans
3/4 cupShredded mozzarella cheese
1/4 cupChopped green onions
Optional: you could add any thing you want in a small amount and still be healthy

We Are Back From Atlanta Where We Attended AmericasMart

All I can say is we had an amazing time attending this years AmericasMart. We stayed in Atlanta this past Thursday- Sunday and shopped around the clock.

14 floors of shopping that seemed like it would never end. Necklaces, bracelets, rings, clothing, and so much more!!

They even had food vendors on the first floor so you could eat lunch and not have to leave.

They have signs posted in several locations where they ask you not to take any photos while inside so my pictures are limited. The first building with fashion and jewelry had 14 floors to shop. It was amazing. The home d├ęcor building had over 20 floors and there was also a 3rd building with several floors.

We also went into the Culinary building where you had the chance to taste every product vendors had to offer. It was the size of two football fields with food samples everywhere.

During the first day we had lunch at the most delicious seafood restaurant. The crab soup was out of this world and like nothing I have tasted before. It was the perfect way to start a day of shopping.

Then we were off for our first day of shopping! Vickie brought their rolling carts for us to use and they were great and made shopping so easy.

We found the best goodies everywhere we shopped. I am sure I will have to do a separate post on some of the items but here is just an idea of a few items.

I love these 6 bracelets and plan to wear them stacked in several different combo ways.

I was so excited to find this company that sells the dress and beach cover up. I purchased a couple of colors in the dress and the beach wrap and can not wait for them to arrive. The girls were wearing them while working and they are so cute on. I also purchased the coral shirt which is in the top photo. You can wear it as a beach cover up or with white pants and it looks amazing.

My ring was my favorite find and has my birth stone in the center. I love it.

Then we were off to the mall to do more shopping. We found some great deals but its hard going to purchase retail after spending days shopping direct from market. A few photos of our shopping trip.

Our first time on the Marta Subway ride. If we had taken a car it would have easily taken an hour to get through the traffic but we made it to the mall in about 15 minutes. I wish we had this in my city.

We stopped in at C Wonder which is Tory Burch's ex-husband store. We found some great finds and his style is very much like Tory's.

We had to yummy food every where we went from sun up to sun down. I am back and sticking with salad and grilled chicken to make up for all the great food I ate.

Someone on our trip purchased a new Louis Vuitton......................sadly it wasn't me. I will keep my wish list going for the future!

I love the story behind this photo above. I just loved this outfit this complete stranger had on while we were shopping. I told Dallas I had to snap a photo of it while she wasn't looking so I could find something just like it. I thought Dallas was going to die watching me be silly with taking pictures.

On our way home we stopped for BBQ and would you look at that Mac and Cheese and the size of that potato!!!

I will be sure to snap photos during the week to share the great jewelry finds because they are really great!
