Sweet Potato Casserole Recipe



I thought I would share my sweet potato casserole recipe because it doesn't have to be Thanksgiving to cook this. A Sunday afternoon dinner is perfect to serve this.

Ingredients


Filling:

  • 3 cups mashed sweet potatoes
  • 1 cup sugar
  • 1/2 cup melted butter
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Topping:

  • 1 cup brown sugar
  • 1/2 cup all purpose flour
  • 1/3 cup melted butter
  • 1 cup chopped pecans

Directions

Preheat the oven to 350 degrees F.

Filling:
In a large bowl combine all the filling ingredients. Transfer to a buttered 1 1/2 quart casserole dish.

Topping:
In a medium bowl combine the brown sugar, flour, and butter until moist and the mixture clumps together. Stir in the pecans and spread over the top of the sweet potatoes in an even layer. Bake until the top is golden, about 25 to 30 minutes. Remove from the oven and serve hot.
