Key Lime Pie- The Best Recipe Ever

The very best key lime pie ever!

 

Ingredients


For the filling:

  • 6 extra-large egg yolks, at room temperature
  • 1/4 cup sugar
  • 1 (14-ounce) can sweetened condensed milk
  • 2 tablespoons grated lime zest
  • 3/4 cup freshly squeezed lime juice (4 to 5 limes)

For the decoration:


Directions

Preheat the oven to 350 degrees F.

For the crust, combine the graham cracker crumbs, sugar, and butter in a bowl. Press into a 9-inch pyrex pie pan, making sure the sides and the bottom are an even thickness. Bake for 10 minutes until firm and golden. Allow to cool completely.

For the filling, beat the egg yolks and sugar on high speed in the bowl of an electric mixer fitted with a paddle attachment for 5 minutes, until thick. With the mixer on medium speed, add the condensed milk, lime zest, and lime juice. Pour into the baked pie shell and freeze.

For the decoration, beat the heavy cream on high speed in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form. Add the sugar and vanilla and beat until firm. Spoon or pipe decoratively onto the pie and decorate with lime. Freeze for several hours or overnight.

Note: If you have concerns about raw eggs, combine the yolks with 1/2 cup of the lime juice used in the recipe in a double boiler. Whisk constantly over medium heat until the mixture reaches 140 degrees. Use in place of the raw egg yolks, remembering to add the remaining 1/4 cup of lime juice to the filling mixture along with the condensed milk and zest


Story behind this pie..............This past Sunday was Eddies birthday and this is his favorite pie. I only make it on special occasions because it really is that special!

Spa Day...Happy Birthday!

Sunday was Eddies birthday so I surprised him with a day at the spa. I purchased the couples package so we could make a day of it. I felt it was the perfect gift because who doesn't love a massage and all the extras that come with it. Jacuzzi, steam room, hot tub, gym, heated pool, quiet lounge, and more!

After running 3 half marathons and a handful of 5k races this year I felt I would enjoy it also. If you haven't done this before you have to! It was amazing and took 5 tons of stress off of me. Eddie had a great time. Here are a few pictures of inside the spa.

Since it was Eddies birthday we will end on a photo from the mens locker room/spa room that I had him take. Of course in their room they get a huge TV on the wall.

If you have never done this I would highly recommend it. We had such a fun and relaxing time and I can not wait to go again!! Happy Birthday Eddie!

What To Drink As A Runner




I have been researching several different sources from books, magazines, and personal trainers on what the best drinks are to help a runner. Here is what I have found.

PreRun
Coffee or tea- caffeine has been shown to boost endurance.

Coconut water- the clear liquid found in coconuts is packed with electrolyte potassium.

I almost always have a cup of coffee an hour before my runs. Its just the perfect pick-me-up! I remember during the Savannah Rock n Roll half marathon we made a 5:30am coffee stop.

MidRun
Salt packets-  Most long distance runs will have them on hand at water stations.

Electrolyte tablets- They dissolve quickly in water and are a low calorie way to replenish electrolytes.

Sports Drinks- Carbs provide mid run energy while sodium helps replace electrolytes lost though sweat.

I like to take in a lot of water on my long runs because I use the GU packets to replenish what I have loss.

PostRun
Veggie juice- has a good source of sodium to help replace electrolytes.

Chocolate milk- Its inexpensive and has the right amount of carbs to protein ratio for muscle recovery. This one seems to be divided down the middle, some people say yes and some say no its to much sugar.

Fruit juice- High calorie so drink in moderation. Tart cherry juice has melatonin which research has found may reduce inflammation when consumed on a regular bases.

Smoothies- This is what I use a lot. Fruit and yogurt blends provide antioxidants and protein.

During the week
I drink a lot of water. I feel so much better when I am hydrated during the week. I might allow myself one diet soda as a treat. I went from regular soda to diet soda to flavored waters. You dont have to make a big change all at once.



What do you drink after a long run?



Dinner at Uncle Bubba's in Savannah

This is my final post from our trip to Savananah. On our first night and the night before my half marathon we went to dinner at Uncle Bubba's which I am sure all of you know is Paula Deen's brothers restuarant.

This was our 2nd time eating at Uncle Bubba's and I believe it will be the last time. No real reason of anything that went wrong just no big Wow except for the price!

I didn't get to take any photos inside Uncle Bubba's but we grabbed a few as we were leaving. A sweet man stopped and asked if we wanted us to take a photo. I was very grateful so I didn't have the heart to say he missed the Uncle Bubba sign!



I think I would save your money on this stop and just make a trip to Paula Deen's! Nothing wrong but just was so plain at such a high cost. Its hard for me to say that since something good was in the food because I ran my best half marathon the next morning!!!

Leopolds Ice Cream Visit While in Savannah for Half Marathon




While in Savannah we had the opportunity twice to visit Leopold's Ice Cream Shop. There are a few reasons this is a famous ice cream shop.


One reason is the owner is friends with Paula Deen and has been a guest on her show several times. The second reason is the owner is a Hollywood Producer and worked with Tom Cruise and many other actors.


They offer so many choices of ice cream and it was so good. Even when we went back the 2nd day I went for the mint chip ice cream again.




I love how all of the businesses had signs to welcome the runners into town!


I loved the old time diner feeling. We just sat for an hour and enjoyed our ice cream!








When we left we walked right into Matt Dillon coming out to the movie theater next door from an event.


Great visit, great ice cream, and well worth stopping by when you are in Savannah! Next time we are there it will be on our list again!

Our Hotel The Savannah Hilton Garden Inn Was Great!

As I watched the Rock n Roll site I noticed hotels were booking fast so I made our reservation pretty early. We stayed in The Savannah Hilton Garden Inn. We were pleased with them from the moment we walked in the door.


As we entered the building they had signs that welcomed the runners along with stickers the employees had on. Everyone was so friendly and helpful.

They also had a special dinner for the runners to help them carb up before the race. We didn't take part in this because we went to Uncle Bubba's for seafood.


After so many hours of travel we snapped a few fun pictures.

Our room was great and very clean. The bed was very soft and perfect for resting before and after the race.


There gym was nice and very clean.


We had the best breakfast the morning after the race at the hotel. Omelets, waffles, french toast, and much more. Hungry right!



If you sign up for this race give this hotel some thought! I highly recommend it.

Dinner At Paula Deens After the Savannah Half Marathon

After the Savannah 2012 Rock n Roll Half Marathon we went to dinner at Paula Deens. I made my reservation 4 months in advance so that should tell you I was very excited. After running my half marathon I was more than hungry, so here is a peak into our dinner!





Of course you wish and wish Paula Deen will actually be there and she wasn't but I did get as close as I could. Funny story that I posted this on facebook and someone said, "Paula looks like a cardboard." Well yes she is!



I love the style of the restaurant and the decor. Really lets you feel the southern style.



Look what was for dinner.............Roast, mashed potatoes, fried chicken, black eye peas! Yes I am southern.


Trey enjoyed his meal also because after all he did an awesome job cheering me on!


From the look on our face you can see we really enjoyed everything.


When we left we saw the carriage going down the street which was a fun site after our great southern meal..


If you take part in the Savannah Rock n Roll Marathon I would highly recommend stopping in at Paula's!
